Easy Cheesy El Gando
Ingredients:
2 lbs. ground beef
2 cans (14.5 oz) diced tomatoes
1 can Ro-tel, tomatoes and green chilies
1 package chili mix
1 package yellow rice
1 can cheddar soup
1/2 cup milk
1 cup grated cheddar
1 bag corn chips if serving as a main dish
OR, 1 bag tortilla chips if serving as layered dip
Instructions
Cook and drain ground beef.
Add chili mix, tomatoes, and Ro-tel.
Simmer until almost dry.
Cook yellow rice as directed on package.
Heat cheddar soup and milk until blended and hot.
Layer the following in a 9"×13" casserole dish: 1/2 of meat/tomato mixture,
all the yellow rice, remainder of meat/tomatoes.
Spread cheddar soup mixture evenly on meat and then sprinkle cheddar
cheese on top.
If serving as a main dish—top with corn chips, or serve with tortilla chips
for a layered dip.
Serves ten.
